Mikey's Eggs!

Here’s another variation - “Mikey’s Eggs”:

Start by sautéing some thinly-sliced onions in a skillet with a bit of olive oil on high to medium-high heat. (Or, if you’ve just fried up some bacon, leave a little bit of the grease in the pan.) While that’s cooking, scramble as many eggs as you want in a bowl, with a splash of milk. Thinly slice some cheddar cheese off on the side. When the onion edges start turning brown, add the scrambled egg mix to the pan and toss in the cheddar slices all over and reduce the heat slightly. Sprinkle some salt, pepper and paprika and keep turning to cook evenly. When it’s done to your liking, off it comes!

Great with toast (and bacon)!
