Lobster!
Here’s a way to do a tail or two as an appetizer: Pick up one or two lobster tails (even Costco has ‘em!). After thawing, rinse thoroughly. Using scissors or kitchen shears, cut out the soft under- shell area on both sides and remove to expose the meat. Make a cradle for each out of foil to keep them sitting level on the grill or in the oven (set to “Broil”). If using an oven, place them on the lowest rack level. Baste with garlic melted butter with a dash of paprika. As they cook, they’ll tend to curl up. You’ need a mitt or cloth to hold them and lay them out flat again from time to time. Baste often, cook only for about 15-20 minutes. The meat should become firm when done. If you overdo it, it tends to become rubbery. Be careful. Once done, remove the meat, cut it up into bite-size chunks and put back into the shell.
A real hit at a small dinner party. Well worth the effort!
