Kebabs!
I know, the traditional way to make these things is alternating meat, onion, mushroom, pepper, etc. all on one stick. I’ve had a difficult time getting them to turn out properly on the grill. Veggies seem to overcook before the meat’s done. My variation seems to work better: Instead of a mix on each skewer, put only mushrooms on one, sliced peppers on another, onions on a third and the meat on other ones. Doesn’t much matter what the skewers are made of. I prefer longer metal ones for more capacity, but wooden ones work fine as well. Gives you complete control of the cooking process, so everything gets done just right! Doesn’t require much more than a light brushing with butter or oil, some seasoning and throw ‘em on. Cook until you like the way they look. When done, just push everything off the skewers into a common bowl and serve. Yeah!
